Easy peasy salad

The sun is finally shining and summer seems to be around the corner. And that makes me think of salad! Personally, I can be really picky about my salads and what goes in them.

This is another easy recipe to convert to vegan. Just swap the feta for a handful of nuts, I recommend walnuts with this recipe and remove or swap the mayo for a vegan version.

I haven't out any exact measurements into this recipe because everyone likes a different ratio of leaves to fruit to couscous. Please find what works best for you, the amounts I have added are a rough guideline only for a single person serving. This is a really versatile recipe and you can easily switch out any of the fruit for veg or the feta for chicken etc. It can be as big and as bold as you want it to be! Happy salad making.

Ingredients

  • 1 handfulMixed salad leaves, about
  • 1/4Cucumber, cut into small chunks
  • Cherry tomatos, a handful, halved
  • 1/2Red pepper, diced
  • 30 gpine nuts, lightly toasted
  • 30 gcouscous, cooked
  • 50 gfeta crumbled
  • 3-5new potatos, boiled
  • 2 tbspnmayonnaise
  • Some chives
  • Salt and pepper for seasoning
  • 1wedge of lemon

    Gently wash the new potatos and boil until soft. While the potatos are boiling cook the couscous according to the packet instructions. (I often but the flavoured just add water packets. I find a lemon or lime flavoured one works well with this recipie. Or with placing couscous I cook it in stock, chicken or veg).

    Chop the cucumber, tomatos and red pepper. Grab your serving dish or tupperware (if for a work lunch) and add the salad leaves, cucumber, tomatos and red pepper. I usually try to keep this salad to one side of the dish.

    Once the couscous is ready add it to the serving dish leaving a space for the potatos still.

    Once the potatos are soft drain well, then in a separate bowl mix with the mayonnaise chives and season to taste. Now add to the remaining space in the serving dish.

    Sprinkle the toasted pine nuts and feta over everything in the serving dish. Serve with a squeeze of lemon.
