Pre heat the oven to 18.°C Grease 2 9 inch tins and sieve dry ingredients

Cream margarine and sugar for 3-5 minutes until light and fluffy

Add eggs one at a time

Add vanilla and mix well.

Fold in flour alternating with milk to the batter in 3 parts, beginning and ending with the dry ingredients. Fold in the coconut. Pour into the pans and bake for 45 -55 minutes.

Bake at 180°c for 45 mins.
