Lemony Spinach Rice (Easy for Students)

Finely chop the onion in a blender.

Pour enough olive oil into a pot to cover the bottom. Turn on the stove and heat the oil. Add the chopped onion and sauté lightly.

Lower the heat to medium and add the frozen spinach to the pot (no need to thaw—add it straight from the freezer). Sauté, stirring constantly, until the spinach is thawed and doesn't stick to the pot.

Once the spinach is thawed, add a little salt and pepper, stir well, then add the rice. Stir again, add 2 1/2 cups water, and let it cook for about 20 minutes. Add more water if needed. Keep the heat low and stir often, as spinach can stick easily. When the rice is cooked, add more salt or pepper if needed. Finally, add lemon juice to taste if you like.
