Ingredients

  1. 2 1/2 cupsfinely ground almonds (250 grams)
  2. 1 1/4 cupssugar (250 grams)
  3. 4eggs
  4. 1 teaspoonground cinnamon and the zest of 1 lemon

Steps

    Mix the dry ingredients together well.

  2. 2

    These are the sugar, ground almonds, cinnamon, and lemon zest.

  3. 3

    Lightly beat the eggs; do not overbeat.

  4. 4

    Combine the eggs with the sugar, almonds, lemon zest, and cinnamon. Mix everything together until well blended.

  5. 5

    Pour the mixture into a baking pan lined with parchment paper and greased with butter. Bake in a preheated oven at 350°F (180°C) for about 40 minutes. Check doneness by inserting a toothpick—if it comes out clean, the cake is ready.
