Ingredients

2 servings
  • 2 tbspmilk
  • 1 tbspchopped spring onion
  • 2egg-yolks beaten
  • 3 tbspall-purpose flour
  • 4 cupsmashed potatoes
  • 1 bunchcoriander
  • 1egg beaten
  • Dried breadcrumbs

Steps

  1. 1

    Combine milk, salt, pepper, onion, beaten egg York, flour and mashed potatoes in a mixing bowl

  2. 2

    Chill and then shape using a serving spoon

  3. 3

    Dip into beaten egg, then roll through breadcrumbs

  4. 4

    Fry each croquette in shallow oil until brown on all sides
