Ash gourd is also known by a variety of common and regional names..as white gourd,winter melon, petha kaddu, chalkumra in bengali and komora in Assamese. Khola in Marathi.
The taste of Ash gourd is very mild, like a cucumber.Ash gourd is also a valuable sauce of minerals like iron, potassium, zinc, calcium and magnesium.  The gourd also provides a good amount of protein, carbohydrates and dietary fiber.

Ingredients

15 minutes
2-4 servings
  • 1medium small size White petha
  • 1big size potato
  • 1" Ginger grated
  • 2green chillies chopped
  • 1/4 tspCumine seeds
  • 1/4 tsp Mustard seeds
  • 2whole red chillies
  • 1 Cupmilk
  • 1/2 cup water
  • 1/2 tspsugar
  • to tasteSalt
  • 1/2 tspTurmeric powder
  • 1/2 tsppure ghee
  • 2 tspOil

Steps

15 minutes

    Wash and Peel the Ash gourd and potatoes
    Both are cut to dices(cube). Now heat the pan with oil. Add cumin and mustard seeds. When crackle add haldi powder,whole red chilli and sugar. Now add potatoes fry some times. Add white gourd. Grated ginger and green chillies. Mix altogether. Now add milk and water init. Mix it well. Cover the pan and cook untill potatoed and Ash gourd fully done. Switch of the flame and sprinkle some Coriander leaves. Serve with paratha, roti and rice.
