Ingredients

5 servings
  1. 2medium size boiled potato (peeled and grated)
  2. 1 tspginger- garlic paste
  3. 1/4 cupgrated paneer
  4. 1onion chopped
  5. 1/2 cupgrated carrot
  6. 1/2 cupgrated cabbage
  7. 1/4 cupfresh coriander leaves
  8. 2 tbspfinely chopped dry fruits
  9. 1/2 cupbesan /Gram flour
  10. 2 tbspcorn flour
  11. to tasteSalt
  12. Oil for brushing the kabab
  13. 1/4 tspblack pepper powder
  14. 1/4 tspturmeric powder
  15. 1 tspred chilli powder
  16. 1 tbspcoriander powder
  17. 1 tspcumin powder
  18. 1/2 tspchaat masala
  19. 1 tbsplemon juice
  20. 1 tspgaram masala
  21. 1/4 tspcumin seeds
  22. 1/2 tspasafoetida/hing
  23. 1 tbspoil
  24. Some bamboo or metal skewers

Cooking Instructions

    On medium flame heat 1tbsp oil. Add cumin seeds.

    When it start to crackle and Hing, onion, chilli and ginger garlic paste. Saute it for 1-2 minutes.

    Now add the grated carrots, cabbage, salt and mix them. Cover the pan and let the vegetables Cook for 3-4 minutes.

    Remove the lid and mix all spices, mix them and cook it for another 2 minutes.

    Transfer the cooked vegetables into a plate and let it cool down.

    Now transfer this mixture into a food processor and grind it into a coarse paste.

    Now transfer the mixture into a bowl and add the grated paneer, potato, gram flour, corn flour, fresh coriander, dry fruits and lime juice.

    Mix them all well and knead them into a soft dough like mixture.

    Shaping the kabab:-

    Grease the palm with little oil, take a ball size mixture and then evenly sculpt the mixture around bamboo or metal skewers to form long sausage shape.

    Brush the kababs with some oil on all sides.

    On stove top heat the grilling pan, drizzle some oil and cook the brushed kababs on medium flame to low flame. It would take around 15 minutes.

    Serve these delicious veg - seekh kababs with spicy green chutney, tomato sauce and salad.
