Clean the fish by removing the scales, guts, and any other unwanted parts.

Remove the fins and make 3 diagonal cuts on each side of each fish. Do not cut all the way through.

Rinse the fish well and pat dry.

In a mortar and pestle, crush the salt and allspice berries. Add the onion and crush, then add 6 to 7 garlic cloves and crush again. Add the lemon juice and olive oil, and mix well.

Marinate the fish with this mixture, starting with the inside, then into the cuts, and finally all over the outside.

Place the fish in a baking dish, cover with plastic wrap, and refrigerate for 30 to 60 minutes.

After marinating, sprinkle the fish with flour and shake off any excess.

In a skillet, heat the remaining garlic cloves over low heat in oil.

When the garlic is golden, remove it from the oil and add the fish. Make sure the oil is hot but not smoking.

While the fish is browning, spoon the hot oil over the top. Flip after 7 minutes, cook for another 7 minutes, then remove from the pan.

Remove any excess oil.

Serve with rice, salad, or your favorite sides.
