Here's a tasty version of Uthappam in combination with egg. Which is very tasty and easy to prepare.

Here's a tasty version of Uthappam in combination with egg. Which is very tasty and easy to prepare.
Steps

Take 6-7 hours soaked rice and dal.Drain it.Put it in grinder with beaten curd and grind into a smooth batter.

Keep it in warm place for fermentation for overnight. This time can vary in different place for different temperature.
Now mix salt to taste with fermented batter.

Take a pan,grease with oil in medium heat.
Pour ladle of batter in the pan.Cover it for a minute.Now add half of vegetable topping. Sprinkle little salt and pepper. cover it for 1 minute.

Break 1 egg on the uttapam and spread this with a fork or spoon.
Sprinkle half of grated cheese over it.
Season with little chilli flakes and pepper powder.Cover it for 3-4 minutes. - 5
While everything is cooked properly,take out uttapam from pan.
Fry another uttapam with leftover batter and toppings in similar manner.

Serve it with some gernishing with Shambhar or ketchup or coconut chutni or green chutney as it is.
Cut into pieces as you want.
