Vegetable Noodles with fried eggs

Perboil the noodles, the drain and set aside.

Slice the pumpkin leaves, brunette pepper and onions.

Into a non stick frying pan add 3 tea spoon of groundnut oil, allow to heat then add onoins and fry for 30seconds, add the noodles followed by pepper. Cook for 30seconds then add pumpkin leaves. Allow to cook for 30 seconds.

Set this aside.

Break the eggs and beat. Add salt(to taste), pepper and onions.

Add 5ml of butter into a non sticky pan allow to heat, the pour egg mixture and allow to fry. This should take about a minute.

Dish and enjoy your noodles the healthy way.
