BREAD ROLLS
This used to be my favourite snack at the school canteen, along with bread pakodas and Samosas. It’s a very filling and tasty evening snack. These can be made and refrigerated in the morning, and fried in the evening, when the kids come back from school or you’re having guests over.
* Make sure to use fresh and soft bread. If the bread is dry it’ll crumble/ break.
* Temperature of the oil is very important. If it’s too hot the bread Rolls will get burnt. If oil is not hot enough, the bread rolls will soak in lot of oil.

Stuffing :
1) Boil the potatoes, cool, and roughly break into pieces with your fingers.
2) Boil the carrots and peas and keep aside.
3) Heat 1 tbsp oil in a non stick pan. Temper with cumin seeds.
4) Add the potato pieces, and boiled carrots and peas. Stir fry for 2 minutes.
5) Add green chillies, sprinkle all the rest of the spice ingredients.
6) Mix well and mash the mixture a little.
7) Add coriander leaves and mix till the mixture comes together. - 2
Lightly trim the edges of the bread slices. If you want to make big rolls keep the bread slices whole. Else slice them into half like I did.

Take a slice, wet the edges lightly and sprinkle very little water on the rest of the central portion.
The idea is to just samp the slices… not to let the bread soak in too much water. Otherwise the bread will break and crumble. - 4
Place the slice on your palm, press and Squeeze the bread gently between your palms, to remove any excess water.

Place a small portion of the filling in the centre, bring the edges together and seal the bread by pressing the edges and shape it into an oblong shape roll using your palm.

Make sure that the filling is nicely sealed from all sides. Similarly make all the rolls and keep aside.

Heat oil in a deep frying pan. The oil should be medium hot.
Slide the bread rolls into medium hot oil. Leave for a minute or two before turning over. - 8
Fry the bread rolls till golden brown and drain them on a kitchen napkin to remove any excess oil.

Serve the bread rolls with tomato sauce or green chutney. Serve them HOT for the best taste! 😊
