Ingredients

  • 2 cupsEgyptian rice (about 400 grams)
  • 1 cuplentils, rinsed (about 200 grams)
  • 1/2 cupvermicelli pasta (about 50 grams)
  • 2 cupssmall pasta, cooked (about 200 grams)
  • 1large onion
  • Salt and black pepper, to taste
  • 1 teaspooncumin
  • For the sauce:
  • 4 tablespoonstomato paste
  • 5garlic cloves
  • 3 tablespoonsoil
  • 3 tablespoonsvinegar
  • Black pepper and salt
  • Cayenne pepper, to taste
  • For the dukka:
  • 8garlic cloves, minced
  • 3 teaspoonscumin
  • 3 teaspoonsground red chili pepper
  • 2lemons
  • 2 teaspoonssalt
  • 1/2 cupvinegar (about 120 ml)

    To make the sauce: In a pot over medium heat, sauté the garlic in oil until fragrant. Add the tomato paste, salt, cayenne pepper, and black pepper. Stir and bring to a boil. Add the vinegar and let it cook for 5 minutes. Remove from heat and set aside until ready to use.

    To make the dukka: Mix all the ingredients together, then place in a pan over heat until it comes to a boil. Remove from heat and set aside.

    In a pot over medium heat, add some oil and fry the onion until golden brown. Remove the fried onions from the oil and set aside.

    In the same pot with the remaining oil, add the lentils and stir. Add salt, black pepper, and enough water to cover. Cook until the lentils are tender.

    Add the rice to the lentils and cook until the rice is done.

  6. 6

    To serve the koshari, layer the rice and lentils, then add the pasta. Top with tomato sauce, fried onions, and dukka.

أنا بدرِّس مادة التاريخ في مدرسة إبتدائية خارج عمان، أحب وظيفتي بجد.في الطبخ مازلت مبتدئة بس احاول اخليه احد هواياتي.خلال فرصة الغدا، دايماً المدرسات بيحكوا عن الأكل وايش يطبخون كل يوم. بالبداية كنت خجلانة اتناقش معاهم واتحدث عن طبخي لأنهم كلهم خبراء.بس هلأ وبعدما علمتني أمي شوية وصفات من وصفاتها المميزة، وبعدما إكتشفت شهية، صرت أطبخ أكثر وأحس بالثقة وقت أحكي عن الموضوع بكل حرية.انا جداً فخورة بالوصفات الي عطتني ياها أمي، وخاصة الوصفات الأردنية التقليدية. ولادي لِسّا صغار ليذوقوها بس أنا متأكدة حيحبوها في المستقبل.حالياً ولادي حابين الحلويات الي لاقيتها على موقع شهية. شكراً شهية !! أنا زدت كم وصفة من وصفاتي وبتمنى تحبوها.ما أحب طبخه:ما أشتهر بطبخه: سندويشاتي الشهية وخصوصاً بانينd الباذنجان المشوي.
