Ingredients

  1. 1 lbsmoked sausage, cut into 1/4” rounds
  2. 1 1/2 lbsmedium shrimp, peeled, deveined, tails off
  3. 2 tspolive oil
  4. 3garlic cloves minced
  5. 3scallions, thinly sliced, with whites and greens separated
  6. 4 tspflour (I use whole wheat)
  7. 1 1/2 cupschicken broth
  8. 1/3 cupheavy cream

Steps

  1. 1

    In a large skillet, heat oil over medium high heat. Add sausage and cook 3-5 minutes. Remove sausage from skillet with slotted spoon, and keep warm.

  2. 2

    Reduce heat to medium and add garlic and scallion whites. Stir for 1 minute. Stir in flour. Whisk in broth and cream, scraping up browned bits from the bottom of the skillet. Cook until thickened, about 3 minutes.

  3. 3

    Add shrimp and sausage to skillet, stirring constantly, until shrimp are cooked through and opaque, about 5 minutes.

  4. 4

    Serve over grits or red beans and rice, and top with scallion greens.
