Rinse the chicken thigh pieces and pat dry with paper towels. Slice the ginger. Smash and peel the garlic cloves. Slice the chili pepper on a diagonal. Remove the stems from the Thai basil and pick the tender leaves; set aside.

Pour 2 tablespoons of toasted sesame oil into a pan. Over low heat, sauté the ginger slices until the edges start to curl.

Add the garlic and chili slices, and stir-fry until fragrant.

Add the chicken pieces and sear both sides until lightly golden.

Add all the seasonings. Simmer over medium-low heat for about 4-5 minutes, until the sauce thickens.

Just before removing from heat, add the Thai basil leaves and stir-fry briefly.

Notes: 1. Traditionally, 'three cup' refers to equal parts sesame oil, soy sauce, and rice wine. For modern tastes, the proportions are adjusted to preference. 2. Sauté the ginger over low heat to avoid bitterness. 3. If using free-range chicken thighs, increase the cooking time slightly.
