#vegan recipe A vegan special kebab delight made from spinach puree

Take a bunch of spinach and clean nicely.

Heat water, put salt and vinegar in it. As soon as water will be about to get boil put cleaned spinach in it to blanch for 2 minutes.

Now put the blanched spinach into a bowl of ice cold water.

Take out the spinach and squeeze all excess water.

Take a grinder & put blanched spinach, along with fresh mint leaves in it and grind coarsely.

Heat a pan put some desi ghee in it. To this add cumin, chopped garlic & chopped green chilli. Cook it well on low flame.

Now add grinded spinach paste to this and cook for 2-3 minutes.

Take a fresh pan and roast some besan in it to slightly brown colour. Add this to the cooked spinach paste.

Add a boiled potato, coriander powder, kasuri me this powder to the mixture. And mix well. We can also add raisins (optional)

Add salt to the mixture. Start giving shape to the kebabs (we preferred Tikki shape)

If desired can add dry fruits as a stuffing to kebabs(optional)

Take some bread crumbs and roll these kebabs in it for nice coating. Shallow fry them to nice golden brown colour from both the sides.

Serve hot garnished with fresh mint leave and some dip.
