Ingredients

  1. 500 gCassava cut in big chunks
  2. 1 cupthick/heavy Coconut milk
  3. 1 cupthin/light Coconut milk
  4. Chopped Coriander
  5. Juice of 1Lemon
  6. Salt

Steps

  1. 1

    Tut Cassava in a pan of water and boil until soft enough.

  2. 2

    Drain the water and lur back into the an, add the thin coconut milk then boil for 15mins until the milk has evaporated.

  3. 3

    Add heavy coconut milk and simmer for a few minutes stirring.

  4. 4

    Adjust the salt and squeeze the lemon juice.

  5. 5

    Remove from heat and garnish with Coriander.

  6. 6

    Serve hot with a meat or fish dish.
