Potato and Corn Soup
This is definitely a different kind of soup.
Steps
- 1
To prepare this soup, chop half an onion and sauté it in a teaspoon of olive oil. Add one or two peeled and cubed potatoes, 4 minced garlic cloves, and a tablespoon of sweet paprika. Stir briefly, being careful not to burn it as it can become bitter. Add water or broth and season with two or three teaspoons of chicken bouillon powder. When it starts to boil, add about a cup of frozen corn kernels and chopped green onion tops.
- 2
Finally, dissolve a tablespoon of corn flour (such as Minsa or Maseca for tortillas) in half a cup of water and add it to the soup to thicken it (This is called K’ÓOL in Maya).
