Crispy fried appetizer from western part of India in which large Green chilli is stuffed and deep fried to golden brown colour.
Steps

For batter - take began in a bowl & add water in it to prepare batter. (Avoid adding too much of water at a time to avoid formation of lumps)

Add some salt, again, red chilli powder & baking soda. Mix all the ingredients well into the batter.

Leave the batter and by the time prepare stuffing for vada.

For Stuffing - take some boiled potatoes, peel & mash them.

Now take a pan put oil as it gets heated add cumin seeds allow it to splutter. Add turmeric powder, chopped green chilli & ginger garlic paste.Saute it well on low flame.

Now to this cooked mixture add mashed potatoes, red chilli powder, salt & garam masala.

Cook the mixture well. Add chopped coriander leaves & keep stuffing aside.

Vada preparation - take large green chillies and slit them from centre. Deseed the chillies.

Now put the prepared stuffing into the chillies.

Heat oil in kadai for frying. As soon as oil get heated dip stuffed chillies in bed and batter and deep fry till golden brown colour.

Serve hot with green coriander and mint chutney.
