Delicious Mouthwatering Mexican Chicken Enchiladas

Preheat oven to 180 deg, grease a square or rectangular dish

Heat oil in a pan. Add onions and saute until onions are soft

Add green chillies, pepper and salt. Saute for few more seconds

Add chicken and mix well, cook for 8-9 minutes. Keep it aside

For homemade Enchiladas Sauce, refer to my earlier recipe

Place tortilla on a plate, apply the sauce evenly over it. Add spoonful of black beans, chicken and 1 tbsp cheese at centre

Roll the tortillas and place in greased dish. Do this for all the tortillas

Add remaining sauce all over tortillas evenly

Sprinkle remaining cheese on top

Bake for 15-20 minutes. Garnish with cilantro and serve warm
