In a bowl, add the ground beef. Mix in the onion, cilantro, spices, and oats. Add more oats as needed until the mixture feels right—this will help the meatballs stay soft and juicy. Form into balls. To keep the meat from sticking, rub a little oil on your hands.

While you prepare the sauce, refrigerate the meatballs. Blend the chipotle pepper with the tomato puree and set aside. Lightly fry the meatballs, cover, and cook for about 5 minutes. Add the sauce and water, season with oregano, and let simmer for a few minutes until done.

Enjoy! Today I served them with white rice, but sometimes I pair them with mashed potatoes and a fresh salad.
