How do you make easy and satisfying low calorie meal during summers?? Here’s how-Put together healthy protein rich beans, quinoa and the best of juicy seasonal fruits. It’s vegan too. So dig in and relax!

Soak the beans overnight and pressure cook/boil until soft, the next day

Cook the quinoa using a cup of water until soft
- 3
Assemble the beans and quinoa in a salad bowl

Add the fruits

In a separate bowl, combine honey,mint, lemon juice and the zest
- 6
Add the prepared dressing over the salad and toss well
- 7
Chill for an hour before digging in. Enjoy!

My tip: this dressing and the combination of beans work well with any fruits of your choice. Add watermelon, peaches or cherry tomatoes if desired
