Ingredients

60 mins
  1. 1whole pumpkin, cubed
  2. 2potatoes, cubed
  3. 3carrots, chopped
  4. 1large onion, quartered
  5. 4 clovesgarlic
  6. Vege or chicken stock
  7. 1 tsponion powder
  8. 1 tspchilli powder or flakes
  9. 1 tspbasil
  10. 1 cancoconut cream
  11. Salt & pepper
  12. 1chilli
  13. Spring onion/shallots
  14. grated parmesan

  1. 1

    Wash and pre all veges

    A picture of step 1 of Spicy pumpkin soup .
  2. 2

    Put all veges, garlic, chilli powder and onion powder in a large pot with enough stock to just cover bring to the boil then reduce heat and leave to simmer for 30 mins

  3. 3

    Once all veges are cooked and soft take a few big spoonfuls of the liquid out and either stick mix till smooth or use a blender.

  4. 4

    Once smooth with no lumps add in coconut and stir.
    Add back to a low heat.

  5. 5

    Thinly slice spring onions and chilli.
    Put a bit of parmesan on top of soup once served then top with sliced chilli and spring onion can also add sour cream.
