Ingredients

3-4 servings
  • 1big brinjal
  • 1 cupcurd
  • to tasteSalt
  • 1 teaspoonred chilli powder
  • 1 teaspoonroasted cumin seeds powder
  • 2 tablespoonsugar
  • 2chopped green chillies
  • 1/4 cupRoasted peanut powder
  • 2 tablespoonghee
  • 1/2 teaspoonMustard seeds
  • 1/2 teaspoonCumin seeds
  • leavesFew Curry
  • 2 tablespoonchopped fresh coriander leaves
  • As neededpomegranate seeds (optional)

Steps

15 minutes
  1. 1

    Boil brinjal, remove it's skin and mash it.

  2. 2

    In a bowl take curd.

  3. 3

    Mix boiled and mashed brinjal into.

    Add salt, red chilli powder, roasted cumin seeds powder, sugar, roasted peanut powder and chopped green chillies. Mix well.

    Add pomegranate seeds and chopped coriander leaves.

    Make a tadka of ghee, mustard seeds, cumin seeds and curry leaves.

  7. 7

    Pour into raita. Mix well and enjoy with roti or Paratha.
