Steps

Boil brinjal, remove it's skin and mash it.

In a bowl take curd.

Mix boiled and mashed brinjal into.

Add salt, red chilli powder, roasted cumin seeds powder, sugar, roasted peanut powder and chopped green chillies. Mix well.

Add pomegranate seeds and chopped coriander leaves.

Make a tadka of ghee, mustard seeds, cumin seeds and curry leaves.

Pour into raita. Mix well and enjoy with roti or Paratha.
