Steps

Wash and cut brinjals in two equal halves and into it mix ginger-garlic paste, salt and turmeric powder.

Heat oil in a pan and stir fry these brinjals till it becomes soft and brown.

Heat 1 tablespoon of oil in another pan and into it add fenugreek seeds and bay leaves and allow it to splatter. Then add garlic paste into it and cook it until it's raw smell is gone.

Add onion paste into it and cook it until it becomes brown.

Now add mustard paste and tomato into it and cook it for 4-5 minutes or until spices are completely cooked.

Now add curd into it and if you want then you add curd's water otherwise use water and cook it for 2-3 minutes.

Now add fried Brinjal and coriander leaves in it and cook it well.

Your chatpate baingan is ready.
