If you're on the road and happen upon the good fortune of a trustworthy boiled egg, you can fluff it up to be more filling and satisfying. The vinegar in the mayo seems to be salty enough for one egg if BP or keeping kosher is on your mind.

Cooking Instructions

Peel eggs, and split in half, placing yolks in mixing container and set whites aside.

Combine one mayo packet at a time to yolk, mashing with the fork, until smooth as dersired (additional mayonnaise is optional here)

Piece off egg whites into the mixture as best as you can. Seems to spread best if you can manage a roughly chopped to finely chopped consistency.

Then combine and fold one last time until all egg whites are completely incorporated and covered.

I make this with all the children's hard boiled eggs from the Easter Holiday every year and also sometimes in between when we are just craving it! I am a fan of miracle whip's flavor however, I will use mayonnaise if that's what I have. I also normally use celery seed as I enjoy the flavor of that as well. However, I've been out of that spice lately so I decided to substitute chia seeds and it worked just fine! You can also substitute any onions you have for the green ones. This is great on bread, in wraps, & even on crackers! (*Note: this recipe is written with eggs already hard boiled, if you need to boil them first, you will need to add 10-15 mins to your cook time.)
