Ingredients

  1. 1 Calmonds
  2. 4 Cbeef stock
  3. 2jalapeños; small dice
  4. 1large shallot; small dice
  5. 4 clovesgarlic; slivered
  6. 1 Ctomato puree
  7. 2 tcumin
  8. 2 1/2 ozdark chocolate with guajillo pepper
  9. 2 1/2 ozdark chocolate with chipotle pepper
  10. 1/2 Craisins
  11. 1/4 Choney
  12. 1/4 Cbrown sugar
  13. 1lime; juiced
  14. vegetable oil; as needed
  15. kosher salt and black pepper; as needed

    Pulse almonds finely in a food processor.

  2. 2

    Heat enough vegetable oil in a large sauce pot to cover the bottom. Add shallots and jalapeños. Saute 1-2 minutes.

    Turn heat down to medium-low. Add garlic. Sweat until garlic is fragrant, about 1 minute. Add to almonds in food processor.

  4. 4

    Add 1 C beef stock. Pulse to combine. Pour almond mixture into saucepot.

  5. 5

    Add remaining beef stock and tomato puree. Simmer 25-30 minutes.

  6. 6

    Chop chocolate finely and add to saucepot with raisins, lime juice, and honey. Simmer 10 minutes.
