In a saucepan, bring the water, butter, 4 tablespoons of sugar, and salt to a boil.

Once boiling, add the 2 cups of flour and mix until a dough forms.

Let the dough cool completely before the next step.

Once cooled, add the 6 eggs and mix well.

Add the vanilla extract and mix again.

The dough is now ready.

In a separate bowl, mix the remaining sugar with the ground cinnamon.

Heat oil for frying. To shape the churros, use a piping bag fitted with a 1 cm (about 3/8 inch) star tip. Pipe 2 to 4 inch (5 to 10 cm) lengths of dough into the hot oil and fry until golden brown.

Once fried, drain excess oil and toss the churros in the cinnamon-sugar mixture.
