Process for koftas

Firstly finely chop palak and wash
Boil 3_4 glasses of water in a big pan. - 3
Add palak to the boiling water and let it boil for 2_3 mins.

Now drain the palak rinse it well and leave it in a strainer for sumtime.

Now take some palak in your hand and press it between your palm to remove the excess water.

Now heat oil in a kadhai and add cumin seed

When they start splittering add the chilli garlic paste and saute till colour changes.

Now add besan and roast for 2_3 mins.
Now add palak and dry spices stir it well and saute it for few mins - 9
Off the flame and transfer the mixture in a plate and let it cool.

Meanwhile we will make paneer balls.
Add little salt and garam masala according to taste. - 11
Mix it well and make 10_12 equal balls.
Now take palak mixture and mix it well to make a dough. - 12
Now make 10_12 equal size balls but bigger then paneer balls.

Now take 1 palak ball and flaten it with your palm place the paneer ballin centre and start folding it nicely from all sides.to cover the paneer..

Roll and Give the shape of cutlets.

In this way make all the balls and keep ready.

Now heat oil in a kadhaiand deep fry on medium flame for 3_4 mins.

Put only two at a time to avoid sticking to each other..

Your yummii sham savera are ready.
Now we will make the gravy. - 19
Process for gravy

Take a kadhia heat butter and oil.
Add onion garlic ginger chillies cashewnuts and peanuts roast it nicely for atleast 10_12 mins. - 21
Now add the tomatoes and cook till they are tender.Off the flame and let it cool.
Now grind it to a fine paste. - 22
Heat sum oil and butter again in the same pan add the onion paste.

Add all the dry spices and cook till oil seperates.

Now add curd mix it well and cook for few mins see that there are no lumps of curd.

Now put kasuri methi and mix it well

Adjust the gravy by adding sum water
accordingly and let it cook on low flame..
Off the flame. - 27
While serving cut the sham savera into two halves put gravy. In serving dish.

Now put the sham savera in gravy toss it with some fresh cream and serve immediately.
