Ingredients

  1. For VEG MANCHURIAN BALLS
  2. 1/4 cupcabbage finely chopped
  3. 1/2 cupcarrot grated (1 medium)
  4. 1/4 cupFrench beans (finely chopped, can skip but adds flavor)
  5. 2 tbspcapsicum grated or minced
  6. 1/4 cuponions chopped
  7. 3 tbspscorn flour
  8. 3 tbspsplain flour or maida
  9. 1/4-1/2 tsppepper crushed
  10. 1 tspginger garlic paste
  11. Salt very little
  12. As neededOil for frying
  13. For VEG MANCHURIAN SAUCE
  14. 1 1/2 tbspoil
  15. 1/2 tspeach ginger and garlic paste or chopped
  16. 1/4 cuponions finely chopped
  17. 1/4 cupcapsicum or bell peppers finely chopped
  18. 1/2 cupchopped coriander
  19. 1 tbspsoya sauce
  20. 2 tbspred chilli sauce
  21. 1 tspvinegar
  22. 1 tbsptomato ketchup
  23. 3/4 tbspcorn flour
  24. 1/4 cupwater to dissolve corn starch
  25. 1/2-3/4 tspred chilli powder or 1 tsp red chilli paste (optional, u
  26. 1 1/2 tbspwater to make chilli paste
  27. as neededSalt
  28. 1/4-1/2 tspblack pepper

    How to make the recipe :

    1. Add veggies, corn flour, plain flour, ginger garlic paste, pepper & salt to a mixing bowl

  3. 3

    . Mix everything well.

  4. 4

    Fry these balls in hot oil on a medium flame. Do not disturb them for few seconds to 1 min after the balls are dropped in oil. They will be delicate and may break if you have not used bread crumbs.

    After few seconds of frying, you can keep stirring and fry until they turn golden.

  6. 6

    Drain them on a kitchen tissue.

  7. 7

    Making manchurian sauce

  8. 8

    . Heat oil in a pan, then add ginger garlic and saute for a min.

  9. 9

    Add onions, coriander and capsicum.

  10. 10

    Saute for 1 to 2 mins on a high flame without burning.

  11. 11

    While these fry, dissolve corn flour in water.

  12. 12

    Lower the heat, then add soya sauce, red chilli sauce,tomato ketchup and red chilli paste.

    Stir the corn flour, pour it to the pan.

  14. 14

    Next stir gently and pour water. Stir and taste the mixture.

  15. 15

    Add vinegar, salt and pepper all to suit your taste. The sauce should taste slightly sour, hot and sweet.

    Keep stirring and cook on a medium flame until the sauce thickens. Do not cook till very thick. The sauce will thicken further after cooling.

    Switch off the stove and allow the sauce to cool for 1 to 2 mins. Boiling hot sauce will make the veg balls soft and will lose the crispness.

     Add the veg balls to the sauce just before serving. Garnish with spring onions or chopped coriander.

    Serve veg manchurian with veg fried rice or noodles.
