When I had first head about the recipe, I had my doubts, I mean cucumber with tempered mustards? But then when I had made this salad, it was literally the best salad ever.
You can eat this salad along Tawa pulao , biryani, khichidi, Khushka, poha, bisi bale bath, lemon rice. You can also eat it as a snack by itself, it tastes amazing and is super healthy when compared to most other snacks.
You can either serve this salad immediately or refrigerate for an hour and then you can serve it chilled.

Scrape the cucumber, cut the 2 ends and rub it well, till foam comes out. Then wash the cucumber well.
You can either grate the cucumber or cut it into small pieces.
Then add the grated coconut.
Dry roast the peanuts, cool it and then add it to the cucumber mixture.
Squeeze lemon and then add Coriander leaves.
For Tempering:-
In a pan add oil and add mustard seeds and then add curry leaves.
Pour this mixture in the cucumber mixture.
