
Steamed Jamaican Fish Snapper
Steps

Wash fish with salt water. Or vinegar and water.

Season fish with garlic, salt and black pepper

Cut up tomatoes

Sauté sliced onion in oil (butter optional)

Remove and place onion in a dish.

Stir fry escallion, thyme and all other vegetables in oil.

Add water, butter and teaspoon of vinegar.

Allow vegetables to cook

Add fish, pimento and onions.

Add 1 whole scotch bonnet (do not allow to burst - must have stem).

Simmer for 15 minutes or until cooked.

Turn the fish after 6 minutes.
