Steps

Start by cutting the small onion into rings. Soak in a teaspoon of salt and set aside. This is meant to make onion more palatable

Roast the pilau spices for around 5mins. Keep stiring so that they do not burn.

I usually opt to blend the spices so that someone does not bite into a black pepper seed while eating. I blend it with the garlic and ginger.

I steam the meat then add the onions after it starts sticking to the sufuria. Be generous with the cooking oil so that your food doesn't stick to the sufuria.

Once the onions are brown add the spices. Keep stiring so that they dont burn. At this point add in the spoonful of sugar.

After stiring for about 2mins add in the potatoes and tomato paste. Cover for about 3mins for the potatoes to cook a bit.

Add in your rice. Stir it for a minute or 2 before adding the water

Add water and let it boil. Since i used 2 cups of rice i used the same cup to measure 4 cups of water. Add salt to taste.

Here is how the onion looks after soaking. Rinse it atleast 2 times.

Slice the tomatoes in a bowl. Add some dhania. Put in the onions. If you like pilipili chop some and add to the kachumbari. Sprinkle some lemon juice on it and let it rest for around 5 mins.

When the rice is almost cooked, place a wet paper on it. Cover it and place a few pieces of hot charcoal on the lid. If you are not using a jiko cover it with aluminum foil, place it on the floor and let it cook for around 10 mins.

Enjoy your meal with your loved ones. Sometimes I like to experiment so i added hoho to my pilau.
