Saute green and red tomatoes in olive oil for three minutes. Add onion. Season. Add squash and water.
Let simmer three minutes. Add poppyseed cream, oregano, wine, and all other ingredients. Season. Let
simmer five to eight minutes. Use to coat gnocchi. - 2
Ingredients: Gnocchi Sauce
1 large green tomato
2 small Roma tomatoes
1/4 cup poppyseed cream sauce or salad dressing
1 tbsp. olive oil
1/4 red onion, diced
1 small squash, diced or sliced
2 ounces red wine
lemon pepper seasoning to taste
fresh oregano, 1 tbsp, minced.
2 ounces water
salt to taste
1 tbsp, various nuts if desired
2 lb. gnocchi, boiled for five minutes, and sauteed in oil for two
minutes
