Ingredients

30 minutes
2 servings
  1. 2 tbspOlive oil
  2. Onion 1, diced
  3. 4 clovesGarlic cloves 4, minced
  4. Carrot 1, diced
  5. 1-1/2 cupsFrench beans
  6. 1 tspDried oregano
  7. 1 teaspoondried basil
  8. Salt
  9. Black pepper
  10. 2Crushed tomatoes
  11. 3 CupsVegetable stock
  12. 1 cupKidney beans

Steps

30 minutes
  1. 1

    Heat oil in a large pan over medium-high heat.

  2. 2

    Add the onion and cook until translucent, add garlic and cook.

  3. 3

    Add carrot and cook till it gets soften.

  4. 4

    Stir in the green beans, dried oregano and basil,salt and pepper to taste; cook 3-5 minutes.

  5. 5

    Add crushed tomatoes and vegetable stock and bring to a boil.

  6. 6

    Reduce the heat to medium low and simmer 10 minutes.

  7. 7

    Stir in the kidney beans and macaroni and cook until the macaroni and vegetables are tender.
    Season with salt.
    Serve Hot.
