Ingredients

  • 750 gfresh tomatoes (skinned)
  • 1 headbroccoli (chopped into small florets)
  • 2 clovessmoked garlic (finely chopped)
  • 1 cartonpassata
  • 3 pintsbeef stock
  • 1 tspsalt
  • 1 tbspbalsamic vinegar
  • Splashoil
  • 1 tbsptomato purée

Steps

  1. 1

    Scald tomatoes in boiling water to skin easily

    Add broccoli garlic and oil to large pan and cook gently to soften, stir in tomato purée then add stock and tomatoes bring to the boil and simmer for 30 minutes

    Blend until smooth
