Mexican-Style Shredded Chicken

Use it for tacos, burritos, or whatever you'd like with this perfectly spiced, super tender shredded chicken.
If you go with tacos, keep it simple. Garnish with diced onion, chopped Cilantro, a squirt of lime and just a few crumbles of good authentic Mexican queso cheese on top of a warm soft corn tortilla. Let the chicken shine through, it's awesome.
I've got alot of pride in this recipe. It took a long, long time to get here but it's close to perfection.
It freezes really well and can be reheated from frozen without much effort, so scale up the recipe and freeze it in a bunch of freezer bags so you can have it at the ready whenever you need.

Season chicken with Adobo Seasoning.

In an oiled stock pot, sear the chicken breasts. Set chicken to side after searing.

Add Ro-Tel, broth, garlic, white pepper, cumin, paprika, chili powder, cayenne and salt. Stir well to mix. Put seared chicken back into stock pot with mixture.

Bring to a boil, stirring occasionally

After it reaches a boil, lower temperature and simmer for 1 hour. Stirring occasionally.

Remove chicken breasts and shred. Place shredded chicken back into liquid. Ladle out liquid until it is level with top of chicken in pot. Discard extra liquid.

Add the juice of 1 lime. Stir to incorporate.

Cook on medium to medium-high heat until the liquid almost completely reduces. Stir regularly but lightly.
