Gather your ingredients.

Cook the sweet potatoes in water until well done, about 40 minutes. This is the longest part. Once cooked, the rest is quick. I cooked more because I used them for another recipe; for the pancakes, I only used 2.

Once cooked, peel and mash them very well. Blend the oats until they form a flour, then add the eggs, 2 tablespoons of butter, milk, and sweet potatoes until you form the batter. Aim for a medium consistency; check if it needs a little more milk.

Heat your griddle, add a little butter, and pour some of the batter. Once bubbles form...

Flip it over.

And it's ready. Serve with fruit or some honey, caramel, or sweetened condensed milk.

Aside from that, this is really just my preference, but I like to take the mashed bits from the bowl along with the mostly mashed bit, then mash them up and finally scatter them on top of and in the cream since it produces a nice texture.
