Ingredients

MARINADE:
1/3 cupolive oil
3 tbsplemon juice
1/2 tspsalt
BOWL:
2 cupsuncooked quinoa
1 bunchkale
1avocado
1 lbboneless chicken breasts
SAUCE:
16 ozsundried tomatoes in oil
2 clovesgarlic
to tastesalt
juice of one lemon
1/2 cupolive oil
1/2 cupalmonds

Whisk together the marinade and marinate kale over night and chicken for 30 min to 2 hours

Cook the chicken and quinoa

Pulse sauce ingredients together in food processor

Toss quinoa and sauce together top with chicken avocado and kale
