Ingredients

  1. MARINADE:
  2. 1/3 cupolive oil
  3. 3 tbsplemon juice
  4. 1/2 tspsalt
  5. BOWL:
  6. 2 cupsuncooked quinoa
  7. 1 bunchkale
  8. 1avocado
  9. 1 lbboneless chicken breasts
  10. SAUCE:
  11. 16 ozsundried tomatoes in oil
  12. 2 clovesgarlic
  13. to tastesalt
  14. juice of one lemon
  15. 1/2 cupolive oil
  16. 1/2 cupalmonds

Steps

  1. 1

    Whisk together the marinade and marinate kale over night and chicken for 30 min to 2 hours

  2. 2

    Cook the chicken and quinoa

  3. 3

    Pulse sauce ingredients together in food processor

  4. 4

    Toss quinoa and sauce together top with chicken avocado and kale
