Ingredients

  • MARINADE:
  • 1/3 cupolive oil
  • 3 tbsplemon juice
  • 1/2 tspsalt
  • BOWL:
  • 2 cupsuncooked quinoa
  • 1 bunchkale
  • 1avocado
  • 1 lbboneless chicken breasts
  • SAUCE:
  • 16 ozsundried tomatoes in oil
  • 2 clovesgarlic
  • to tastesalt
  • juice of one lemon
  • 1/2 cupolive oil
  • 1/2 cupalmonds

Steps

  1. 1

    Whisk together the marinade and marinate kale over night and chicken for 30 min to 2 hours

  2. 2

    Cook the chicken and quinoa

  3. 3

    Pulse sauce ingredients together in food processor

  4. 4

    Toss quinoa and sauce together top with chicken avocado and kale
