Ingredients

4 servings
  1. 1-1/2 lbground beef
  2. 1/4 cground golden flaxseeds
  3. 1egg
  4. 1 tspdried basil
  5. 1 tspdried oregano
  6. 1 tspsea salt
  7. 1 TEVOO
  8. 1med. onion, chopped
  9. 3-4 clovesgarlic, minced
  10. 1-1/2 lbspiral-cut zucchini
  11. 1 jar (28 oz)tomato sauce

Steps

  1. 1

    In med. bowl, combine beef, flaxseeds, egg, basil, oregano and salt. Form 24 one-inch balls.

  2. 2

    In large skillet, heat oil. Cook onion and garlic. Add meatballs and cook 10 min, turning to brown all sides and no pink inside.

  3. 3

    Pour sauce into skillet and heat through. Remove meatballs and sauce to covered dish to keep warm.

  4. 4

    Add zucchini to skillet and cook covered about 3 min, tossing occasionally, until soft.

  5. 5

    Serve "noodles" topped with meatballs and sauce.
