  • 2 lbground beef
  • 1onion, chopped
  • 2 (8 oz.) canstomato sauce
  • 1 canMexicorn, drained
  • 1 can (10 oz.)enchilada sauce
  • 2 tspchili powder
  • 1 tspground cumin
  • 1/2 tspblack pepper
  • 1/2 tspsalt
  • 12(5") corn tortillas, divided
  • 2 cups (8 oz.)shredded cheddar cheese, divided

  1. 1

    Cook beef and onion until done. Drain fat.

  2. 2

    Preheat oven to 375°. Stir tomato sauce and next 6 ingredients into meat mixture. Bring to a boil stirring occasionally.

  3. 3

    Place half of the tortillas in bottom of a greased 9 x 13" baking dish. Spoon half of the beef mixture over tortillas, sprinkle with 1 cup cheese. Repeat layers.

  4. 4

    Bake 15 minutes. Serve with sour cream.
