This is the easiest dum aloo recipe which you can prepare with the basic household ingredients that is currently available with you. It doesn't include onion and garlic. Therefore you can have it during any pujas and upvas. I believe that a "good cook" is the one who simplifies the dish by his/her innovation without doing any compromise with the taste.

Steps

30min
  1. 1

Make sure that you have half boiled the potatoes by adding some salt into it. Otherwise you won't get any salt in the potato pieces while having it.

  2. 2

Heat some oil in a wok and add the green cardamom, cloves and cinnamon. Saute it for a while until the aroma comes out.

  3. 3

Add the chopped tomatoes and a little bit of salt. Saute it very well till the tomatoes become soft and the juices comes out of it.

  4. 4

Add the ginger paste. Saute it well till the oil separates.

  5. 5

Add the poppy seeds paste. Saute it well till the raw smell dissapears.

  6. 6

Add the green chillies paste. Saute it well.

  7. 7

Add the potatoes and mix them very well for a while. If you want to make it more spicy you may add more green chillies paste.

  8. 8

Add some water and bring it to boil. Add the salt for the gravy. Cover it with a lid.

  9. 9

After 5-10min check whether the potatoes has become soft. If yes, add the sugar. Let it be sweetish.

  10. 10

Add ghee and garam masala powder and mix it well.

  11. 11

Remove it from the flame. You may add some coriander leaves if you love the flavour at this time.

  12. 12

    Serve hot with puris.
