Ingredients

  1. 4white Potatoes - tan skin on cut into cube size. Boiled in salt water.
  2. 1Zucchini, sliced into cubes
  3. 4 TablespoonsVegetable Oil
  4. 1 teaspoonCumin Seeds
  5. 1 Bunchchopped cilantro
  6. 1 TablespoonGinger, Garlic and Turmeric Paste
  7. 1 TablespoonVegetable Curry MASALA
  8. Coriander Powder
  9. 1Medium size onion
  10. 2medium Tomatoes
  11. 6 clovesGarlic
  12. 4Green Chillies
  13. 1 TablespoonGaram Masala

Cooking Instructions

    Heat oil in a large pot. Add cumin seeds. In a blender make puree of onion, tomatoes, garlic cloves and green chillies. Cook cumin for 2 minutes. Add chopped cilantro. Cook 2 minutes, add puree and cook covered for 5 minutes. Add a little water (4 tablespoons).

    Add vegetable masala and coriander powder, and add 2 cups of water. Reduce heat to simmer and cook covered 10 mins. Add boiled potatoes and zucchini. Add garam masala and cook 10 mins. on slow heat (covered). Serve when ready to eat.

We had this dish for dinner tonight. Reheated it on a slow heat. Served it Chapati and Aachar with onions/Ginger/Grape Tomato salad. I just can't express it in words how good it was.
