Ingredients

4 servings
  1. 200 gmscooked Long grain basmati rice
  2. 1 handfulsweet corn, French beans and green peas chopped and boiled
  3. 2 tbspnheaped cumin seeds
  4. 1 tbspnginger garlic paste
  5. to tasteSalt
  6. 4cardamom pods crushed
  7. 3-4cloves
  8. 1 inchcinnamon stick
  9. 6-8cashews
  10. 10 gmsraisins
  11. 1large Bay leaf
  12. 2dry red chillies broken
  13. 1small onion chopped length wise
  14. 2 piecesstar anise
  15. 4 tbspnghee(Clarified butter)
  16. 1 tbspngaram masala powder

Steps

20minutes
  1. 1

    In a small non stick pan heat a tbspn of ghee over medium heat

  2. 2

    Toss in the cashews and raisins and fry until brown and keep aside

  3. 3

    Next add the onions in the same pan and fry until caramelised and keep aside

  4. 4

    In a wok add the remaining ghee and let it heat

  5. 5

    Add the Bay leaf, dry red chilli,cumin seeds, cinnamon, cardamom pods, star anise, ginger garlic paste, cloves and sauté for 2 minutes until you get a sweet aroma

  6. 6

    Next add the boiled peas and corn and mix well and sauté for another 5 minutes covered

  7. 7

    Now add the rice, salt and garam masala and cook covered after mixing well for 10 minutes

  8. 8

    Take off the heat and serve garnished with caramelised onions, cashews and raisins
