Baked Beans and chips footlong

Ingredients

  1. 1small tub beans
  2. 1/2 (1 bowl)chunky chips
  3. Pickled cucumber
  4. Footlong
  5. to tasteSalt
  6. 1/2 teaspoonChilli powder
  7. 2 tablespoonchopped capsicum
  8. 2 tablespoonsweetcorn
  9. 1chopped onion
  10. 1 teaspoonginger paste
  11. 1 teaspoonchilli flakes (optional)
  12. 1 teaspoonoregano (optional)
  13. 1 tablespoonoil
  14. Grated Cheese
  15. Butter to spread
  16. Oil to fry if not baking in oven

Cooking Instructions

    In a pan add oil and let it heat for few seconds. Add onion and ginger paste sauté for few seconds and add capsicum and sweet corn. Add baked beans, salt and chilly flakes and let it cook for a minute or so and remove from heat.
    Deep fry (or bake in oven)chips and sprinkle with salt and chilli powder. I baked mine.

    On half of the footlong spread butter. Now cover it with pickled cucumber and spread the baked beans mix on top of it. Assemble the chips on top and spread some cheese on top and grill until the cheese melts.

    Optional you can add oregano, chilli flakes and extra salt to the baked beans mix if preferred.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes.
