3 cupscherry tomatoes chopped roughly
3radish, chopped into small pieces
2cucumbers chopped into small pieces
3spring onions, chopped finely
3 clovesgarlic, minced
2 cupsarugula chopped
1/3 cupparsley chopped
1/3 cupmint chopped
Dressing:
1/4 cupvinegar
zest and juice of two big lemons
1 tspcumin

Mix all salad ingredients

Mix dressing and add to salad. Serve immediately.
