
Chicken and Rice Casserole

Cooking Instructions

Stir the soup, water, rice, paprika and black pepper in an 11x8x2-inch baking dish. Top with the chicken. Season with additional paprika and black pepper. Cover the baking dish.

Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender. Let stand for 10 minutes. Stir the rice before serving.

This is my take on a dish I had years ago. It is not authentic Mexican, but certainly has Mexican flavors. Adding a can of corn to the soup mixture is a great idea a friend gave me. Other things you might want to add are jalapeños, black olives, and cilantro (coriander). Have fun with this one. Make it your own!! Scott Fleury -

I was hungry late on a Monday night and started looking to see what I had. At first I was just going to steam some Lima beans and mix it with a package of rice. Then I saw I has one frozen chicken breast and decided I'll just put all 3 together. Then I remembered I also had a can of cream of chicken soup and that would add some creaminess to my meal. When I started making the soup I thought, I wonder how it would taste with some cream cheese. So I added the cream cheese and realized I wanted to go ahead and make it into a casserole and put some cheese on it. I started adding spices and came up with this blend. It tasted so good I had to add it here! All the ingredients were things I already had at home. It’s actually just leftovers. It started out life as chicken and rice 2 days ago. It was delish. I have issues with leftovers that look the same lol I prefer them to morph into something else.
