Ingredients

40 minutes
  1. 2.2 lbsthinly sliced beef steak (about 1 kg)
  2. 12 ozbacon (about 350 g)
  3. 10.5 oztomatillos (about 300 g)
  4. 2jalapeño peppers
  5. 1small bunch cilantro
  6. Chicken bouillon powder, to taste
  7. Salt, to taste
  8. 1small bunch green onions (or substitute 1 large onion, sliced)
  9. 3.5 ozbacon (about 100 g)

    Add a little oil to a pan and cook the first portion of bacon until browned. Remove the bacon and add the beef. Sear the beef well.

  2. 2

    Blend the tomatillos with the jalapeños, cilantro, and a little salt until smooth.

  3. 3

    Once the beef is fully seared, add the blended mixture. Season with chicken bouillon powder. Cook for 20 minutes in a pressure cooker. Uncover, add the bacon, and finish cooking.

  4. 4

    In a separate pan, cook the remaining bacon with a little oil until crispy. Remove the bacon, add the green onions with a pinch of salt, cover, and cook until tender. Add the bacon back in, mix, and serve as a garnish.

  5. 5

    If you can't find green onions, you can use sliced large onion instead. You can also add extra jalapeños if you like. Serve with beans cooked in their broth.
