Quick Asturian Fabada in 35 Minutes

I needed to prepare lunch for tomorrow and was craving fabada. Since I didn’t have large butter beans, I used the white beans I usually use for stews. If you enjoy hearty, comforting dishes, I encourage you to try this recipe—it’s quick to make, budget-friendly, and really delicious.

Steps
- 1
Gather all the ingredients.
- 2
Place all the ingredients except the beans into a pot and bring to a boil. Simmer for 20 minutes.
- 3
After 20 minutes, add the beans. When it starts boiling again, let it cook for another 10 minutes.
- 4
Cut the chorizo, blood sausage, and pork belly in half. Adjust salt to taste, turn off the heat, cover the pot, and let it rest for 5 minutes.
- 5
Serve. I usually remove the onion and garlic before serving, or you can leave them in the pot but not serve them on the plate—they’re just for flavor.
