Basic Cole Slaw

I had some vegetables given to me that I needed to use up before it all went bad. I LOVE Cole Slaw and I basically had the guts for it. I had mixed carrots (yellow, orange, purple) and a smaller head of cabbage and finally some onions. I chose to use white, regular ones. Finally I came up with the sauce for it by reviewing several recipes and creating a conglomerate. Hope you try it and like it.

Ingredients

  1. 3 CupsCole slaw "guts" (cabbage, carrots, onions, apple?)
  2. 1/2 Cupmayonnaise
  3. 1/4 Cupolive oil
  4. 1/4 Cupvinegar (I used apple cider)
  5. 1/4 Cuphoney (or maple syrup?)
  6. 1/2 tspblack pepper

Cooking Instructions

    Chop the Cole Slaw "guts" if you dont buy prepared bagged slaw. Typical coleslaw is carrots and cabbage. The onions give it a great flavor. I've had it with apple, and its interesting as well.

    Combine the "sauce" ingredients in a blender. Blend to a smooth consistency.

    Pour the sauce into the Cole Slaw "guts" and combine completely. (If you want more sauce, just up the ingredients to your liking.) Refrigerate for a few hours before eating...you'll appreciate it better.

    I do NOT use milk in my recipe because I hate liquidy coleslaw. Hope you like it.
