A great recipe from my Nanna which has minimal washing up and is great to have with a cup of tea!
Steps

Night before, cover your fruit in cold water and leave them overnight

The next day, pre heat the oven to 180 degrees C (gas mark 4)

Put the water and fruit into a saucepan and bring to the boil
- 4
Once boiled, strain off the water
- 5
Whilst the fruit is still hot, put the fruit back into the pan and take it off the heat. Add the butter, sugar and mix until melted

Add the eggs, almond essence and flour and mix together

Butter the loaf tin and add a lining at the bottom with wax paper
- 8
Add the cake mixture to the tin
- 9
Add a few flaked almonds on the top of the mixture
- 10
Bake for 30 minutes on 180 degrees Celsius and then lower the heat to 150 for another 30 minutes

Test with a skewer and if it comes out clean, the cake it ready and should be a nice golden brown on top

Enjoy with either hot/cold with/without a thin layer of butter AND a good cup of tea!
